  1. Cortamos en filetes finos las pechugas de pollo, también cortamos en dados pequeños la cebolla.

Por otra parte, en una tabla extendemos el filete de pechuga de pollo y sazonamos con sal y pimienta negra. ponemos en el centro nuestro relleno de Espinacas y queso feta, tiramos del filete hacia nosotros y el otro extremo hacia afuera hasta conseguir un rollo, solapamos y sujetamos con la ayuda de palillos de madera (mondadientes).
  6. Batimos el huevo en una recipiente y los Corn Flakes los rompemos un poco con las manos o con la ayuda de un mortero, y pasamos el roll de pollo por el huevo, y luego lo empanamos con los Corn Flakes.
  7. En una Sarten a fuego medio con abundante aceite de oliva virgen extra ponemos a freír el roll hasta que esté bien dorado.
  8. Sacamos y lo ponemos en un plato con papel secante para retirar el exceso de aceite.
  9. Servimos en un plato largo, cortando el roll en ruedas medianas y decoramos con tiras de naranja, Limón y perejil rizado.
    Acompañamos con la salsa Agridulce al Oporto y/o con Cebolla Caramelizada al Oporto.
