  1. Se pone el bacalao en harina, una vez que lo hemos puesto en la harina se empieza a freír.
  2. Ahora se empieza a freír el bacalao en la paellera ; mientras vas cortando la cebolla en brunoise, los tres ajos en láminas, 2 zanahorias en rodajas y 1 pimiento verde en brunoise.
  3. Cuando esté frito el bacalao lo apartas y empezamos hacer el sofrito primero se mete la cebolla y los ajos. Y cuando se poche un poco la cebolla y el ajo meteremos la zanahoria y el pimiento verde.
  4. Mezclamos todas las verduras hasta que estén bien pochadas. Y ahora cortamos 1 berenjena en rodajas, se pone en la cacerola agua y sal para que empiece a hervir. Cuando empiece a hervir metemos la berenjena en rodajas y esperamos 15 minutos a que se cueza.
  5. Ahora en una sartén aparte empezamos hacer la salsa se pone aceite, perejil y ajo molido. Se echa una poca harina que nos sobró del bacalao y empezamos a remover, ponemos agua para que disuelva; y lo apartamos.
  6. Ahora que ya tenemos la salsa ponemos en la paellera el bacalao y por encima la salsa.
    Alrededor del bacalao ponemos la berenjena ya cocida. Yo le puesto un poco de soja a la berenjena por si estaba amarga y orégano.
    Y en los huecos que quedan trozos de espárragos.
  7. Al final ponemos perejil encima del bacalao para decorar. Y listo.
