- Con la picadora, picamos la cebolla y la ponemos en una sartén con un buen chorro de AOVE
- Picamos el puerro, añadimos y removemos.
- Picamos los pimientos y añadimos y dejamos que se hagan durante 3 o 4 min.
- Mientras se hacen las verduras, cortamos las berenjenas por la mitad y las vaciamos con una cuchara.
- Picamos la carne de las berenjenas y las incorporamos a la sartĂ©n con otro chorro de AOVE ya que la Berenjena chupa mucho lĂquido
- Dejamos que se haga la Berenjena durante 5min más y añadimos la carne picada, junto con la sal y las especias al gusto, yo eché ajo granulado, pimienta negra recién molida, pimienta cayena en polvo, cúrcuma y orégano.
- Mezclamos bien y cuando la carne esté casi hecha, añadimos la cucharadita de pasta de tomate.
- Mezclamos y dejamos que se haga durante 5 min sin parar de remover. Al final quedará como una pasta.
- Rellenamos las berenjenas
- Ponemos tranchetes
- Queso Mozzarella
- Y las llevamos al horno por 20 minutos a 210° tapadas con papel de aluminio para que el queso no se queme
- Pasados los 20 minutos, quitamos el papel de aluminio y dejamos 5 min más con el ventilador y el gratinador.
- Una vez gratinado el queso se saca del horno.
