- Ponemos el cous cous con el cilantro picado, los cominos, la pimienta, la sal, el chorrito de aceite y cubrimos de caldo de pollo y metemos el bol al microondas 3 min. Sacamos, damos unas vueltas con un tenedor para que se suelte y listo
- Para la salsa de tomate ponemos en una olla el aceite de oliva y seguido el tomate natural junto con la cebolla en polvo. Dejamos a fuego bajito mientras se van haciendo las bolitas. Cuando le queden 5 minutos, añadimos la fritada o el pisto, si no tienes puedes omitirlo. Rectifica de sal y añade el bicarbonato y la stevia (sino azúcar). Deja a fuego lento hasta el final.
- Vamos precalentando el horno a 180ºC. En el bol del cous cous ya cocido, añadimos la pulpa de la berenjena, el huevo, el pan rallado, sal al gusto y la salsa de soja. Hacemos las bolitas y las vamos colocando sobre un papel de horno y la rejilla. Metemos al horno y subimos la temperatura a 200ºC, dejamos hasta que estén doraditas (unos 10 min serán suficientes).
- Servimos con la salsa de tomate de base y las bolitas arriba. Terminamos con poquito de cilantro picado y a disfrutar!
