Sacarlas y pasar por agua fría...escurrir y dejar enfriar. - En un mortero, machacar los cominos y los ajos, echarlo en un bol, poner el pimentón, vinagre, aceite y una cucharada de sal.
Remover bien hasta que se emulsione todo. Añadir las tiras de pimiento y echar las berenjenas en este caldo. Rectificar de vinagre y sal a vuestro gusto. - Tener preparado los tarros. Poner una tira de pimiento en el corte de arriba y sujetar con un palillo (lo suyo son palos de hinojo).
Ir colocándolas en los tarros y cuando estén llenos, rellenarlos con el caldo.
