  1. Tenía carne en la nevera sin moler. La partí en trozos y la molí en la Thermomix. En una sartén amplia con 2-3 cucharadas de aceite agregamos la carne salpimentada hasta que esté bien hecha. Guisamos los 2 huevos; cortamos la berenjena en tacos medianos sin pelar (la pele para evitar inconvenientes en casa), salamos y los cocinamos sin nada de aceite en otra sartén.
  2. Terminada la carne, vertemos el vino (subimos un poco el fuego para que se evapore el alcohol). Agregamos la salsa de tomate, mezclamos todo.
  3. Añadir los tacos de berenjena, los tacos de mortadela, los Huevos troceados, las hojas de albahaca (no tenía fresca y le puse molida). Rallamos el queso pecorino (o de oveja curado) y lo agregamos.
  4. Incorporamos la pasta cocida; mezclamos bien. Dejamos cocinar a fuego suave unos minutos (siempre revolviendo) para que la pasta coja todos los sabores.
  5. Pasamos nuestra preparación a una bandeja apta para horno (yo utilicé un plato muy amplio de barro); le ponemos el queso rallado (deje una parte sin queso, por si hay alguien de casa que no pueda comer tanto queso 😅). Gratinar con el horno previamente precalentado.
